I wanted to post this in time for Cinco de Mayo! When I was in college I worked at a Tex-Mex restaurant called Barberitos. It’s a chain, but I worked in the flagship store in Athens, GA where we trained all the owners of the new chains. While there, I tried out just about every position, so even though I was not the cook, I still learned how to make each recipe. However, I want to emphasize that this is not the recipe they use for their guacamole. They had cartons of Barberitos seasonings that they brought into the store, so I don’t know exactly what was in that… but this recipe is pretty close. I know it’s probably a restaurant you’ve never heard of- but I once saw a woman cry because we ran out of this stuff. Give it a try!
Ingredients:
- 3 avocados, halved, seeded and peeled
- 1 lime
- 1/2 small onion
- 1/4 cup salsa
- 1/2 tsp. cumin
- 1-2 leaves cilantro, diced
- 1/2 tsp. Kosher salt
- 1-2 Tbs. minced fresh jalapenos
Directions:
Squeeze lime juice into a bowl. Add the avocados. Mash with a potato masher (or use a spoon!) Add salt and cumin, then stir. Then add onion, salsa and cilantro, stirring more. Today I didn’t include jalapenos, but if you want to, fresh jalapenos are significantly better in this recipe! Just dice one and include 1-2 Tbs (depending on how spicy you like things!)
