Curried Chicken Salad

Since I have been writing this blog, I’ve realized I have a mild curry addiction. At least you know if you invest in some you’ll have lots of ways to try it!  When I first made this, my boyfriend told me that he would not try it because he hates chicken salad- now he requests it!  The main reason I wanted to make this is because my garden began producing green peppers a couple of weeks ago!

Ingredients:

  • 3 chicken breasts (2 lbs.), cooked
  • 1 Tbs. lemon juice
  • 1 cup celery, chopped
  • 1 apple, chopped
  • 1/4 cup green pepper, chopped

Dressing Ingredients:

  • 1/2 cup mayo
  • 1/2 tsp. curry powder
  • 1/2 cup sour cream

Cook chicken, cut into pieces.  Salt and pepper to taste.  Squeeze a little lemon juice over it and cover.  Refrigerate overnight or for a few hours.  Combine chicken with other ingredients.  Keep in refrigerator until ready to serve!  Try to serve the same day because the apples turn brown over time.

Tonight I served the salad with sweet potato fries, but I think this meal would taste so good with my friend’s amazing Kale Chips.
