This recipe is totally cheating, but it tastes so good! A friend came into town and I asked him what his requests were for the week. He said that his favorite food is Pad Thai. I figured I could give it a shot because what’s the worst that can happen? We have to order take out? The experiment went well, so I thought I’d share it with you! The secret? Thai Kitchen! They make this great Pad Thai Noodle Kit that includes the noodles and sauce, along with directions for making it. I modified it slightly because I love chicken satay, so I wanted to make the combo, instead of the traditional Pad Thai.
Ingredients:
- Thai Kitchen Pad Thai Noodle Kit (Thai noodles and Pad Thai sauce)
- 3 Tbs. vegetable oil, divided
- 1 egg
- chicken strips
- Thai Kitchen Peanut Satay Sauce
- 1/2 cup bean sprouts
- Optional garnish: lime and cilantro
Directions:
Preheat oven to 400. Marinate chicken strips in Thai Kitchen Peanut Satay Sauce 20-30 minutes. Bake for 15-20 minutes.
Bring 4 cups of water to boil, remove from eat, add rice noodles. Let stand 6-8 minutes. Rinse with cold water.
Heat 1 Tbs. oil over medium heat. Add egg, scramble. Remove egg from skillet.
Add 2 Tbs. oil in same skillet, add softened rice noodles and Pad Thai sauce, saute 4 minutes.
Stir in bean sprouts and scrambled egg. Garnish.

Lemon Butter Sauce:
Melt 1 Tbs. butter. Squeeze in 1/2 lemon. Stir in broccoli!
