Greek Chicken

This entree is a healthy one… imagine a Greek salad on a chicken breast!  I got recipe originally from Sweet Pea’s Kitchen , but I modified it slightly to go with what I had on hand.

Ingredients:

  • 4 oz. feta cheese
  • 1/4 cup kalamata olives
  • 1/4 cup minced fresh parsley
  • 3 Tbs. lemon juice
  • 1/4 cup olive oil + 2 Tbs.
  • 1 Tbs. oregano
  • 1 cup cherry tomatoes, halved (I was out of these tonight…)
  • as many boneless, skinless chicken breasts as you want! (but no more than 6…)
  • pepper
  • salt

Directions:

Preheat oven to 450.  Heat skillet with 2 Tbs. olive oil over medium high heat.  Season chicken with salt and pepper.  Brown chicken 1-2 minutes on both sides.  Put chicken in roasting pan and cook 25-30 minutes until cooked through.

In a separate bowl, mix feta, olives, parsley, lemon juice, 1/4 cup olive oil, oregano and cherry tomatoes.  When chicken comes out of the oven, top with feta mix.  Enjoy!
