This entree is a healthy one… imagine a Greek salad on a chicken breast! I got recipe originally from Sweet Pea’s Kitchen , but I modified it slightly to go with what I had on hand.
Ingredients:
- 4 oz. feta cheese
- 1/4 cup kalamata olives
- 1/4 cup minced fresh parsley
- 3 Tbs. lemon juice
- 1/4 cup olive oil + 2 Tbs.
- 1 Tbs. oregano
- 1 cup cherry tomatoes, halved (I was out of these tonight…)
- as many boneless, skinless chicken breasts as you want! (but no more than 6…)
- pepper
- salt
Directions:
Preheat oven to 450. Heat skillet with 2 Tbs. olive oil over medium high heat. Season chicken with salt and pepper. Brown chicken 1-2 minutes on both sides. Put chicken in roasting pan and cook 25-30 minutes until cooked through.
In a separate bowl, mix feta, olives, parsley, lemon juice, 1/4 cup olive oil, oregano and cherry tomatoes. When chicken comes out of the oven, top with feta mix. Enjoy!
