This is my most-requested recipe when people come to visit- and I live at the beach where fresh seafood is readily available… that should tell you everything you need to know about the famous mer-eatloaf.
- 1 cup finely chopped onions
- 1/4 cup Italian dressing
- 1 1/2 lb. ground beef
- 3/4 cup ketchup, divided
- 1 pkg. Stove Top stuffing mix for chicken
- 1 cup water
- 2 egg whites
Preheat oven to 375. Cook onions in dressing in large skillet on medium heat 10 minutes, or until golden brown, stirring frequently. Remove from heat; cool slightly.
Combine meat, 1/4 cup ketchup, the stuffing mix, water, egg whites and onions. Mix well. Place in a baking dish and shape into an oval loaf. Spread with remaining 1/2 cup ketchup.
Bake 1 hour, or until cooked through.
